HCG Phase 2 Recipes: Appetizers

With the limited number of calories allowed under Phase 2 of the HCG Diet, it may be time to add some fun foods to your eating plan. If you're looking for a bit of fun and variety, these appetizers are a delicious alternative.

Sweet & Sour Mini Meatballs

3.5 oz.  lean ground beef
2 T minced onion
1 clove of minced garlic
1 serving Melba toast “dust”
1 T  Bragg’s liquid aminos
1 packet Stevia
¼ C lemon juice
⅛ t garlic powder
⅛ t onion powder
⅛ t paprika
Pinch of cayenne pepper
Pinch of salt
Pinch of pepper

Place 1 serving of Melba toast into food processor and grind as finely as possible.  Mix lean ground beef with Melba toast “dust”, onions, minced garlic and spices. Form into small meatballs. In a small saucepan, combine lemon juice, Bragg’s liquid aminos and stevia,  heat for about 3 minutes on a medium heat. Add meatballs to the sauce and simmer for about 8 additional minutes. Stir often and periodically deglaze pan for a rich and tangy sauce.

Strawberry-Lemon on Melba Toast

2 strawberries diced
1 serving Melba toast
1/4 packet Stevia
½ T lemon juice
Pinch of cinnamon
Pinch of salt

Loosely mix strawberries, stevia and spices. Place mixture on top of Melba toast and enjoy.

Onion Soup

1 large Vidalia onion
2 C chicken broth
3.5 ounces lean steak
1 t garlic powder
1 t onion salt
1 t pepper
2 Melba toast

Slice onion into wedges. Season onion and place it on top of a foil sheet. Add 1⁄4 C chicken broth, and wrap it up tightly, and place in a baking dish and bake at 350 degrees for 1 hour. Cook until onion begins to get soft. Serve in a bowl with 2 cups of chicken broth and 2 Melba toasts.

Spinach Frittata

2 large egg whites beaten
1 C Spinach
⅛ t garlic powder
⅛ t paprika
Pinch of salt
Pinch of pepper

Preheat oven to 350 degrees.
Add spices to egg whites and mix thoroughly.
Add spinach to mixture, place into glass baking dish and bake for 10 mins.

Chocolate Vanilla Meringue Puff Cookies

4 egg whites
¼ t stevia
2 drops vanilla
5 T cocoa

Whip egg whites until firm. Fold in stevia, vanilla and cocoa. Drop spoonfuls onto a nonstick pan or aluminum foil. Bake in a cool oven 225 degrees for 1 hour until Meringues are dry.
